Learn to Make Vegan Chocolate Cupcakes

This recipe makes about 12 cupcakes. It may also be doubled for a cake. Ingredients: 1 c. nondairy milk 1 t. apple cider vinegar 3/4 c. granulated sugar 1/3 c. canola oil 1 1/2 t. vanilla extract 1 c. all-purpose flour 1/3 c. cocoa powder (regular or Dutch processed) 3/4 t. baking soda 1/2 t. baking powder 1/4 t. salt Steps 1. Review recipe and gather ingredients. Preheat oven to 350 degrees and line muffin pan with paper liners or use silicon liners with a sheet pan. 2. Combine the nondairy milk and apple cider in a large bowl until foamy. Set aside. 3. In a medium bowl, sift together dry ingredients (flour, cocoa powder, baking soda, baking powder and salt). Set aside. 4. Add the rest of the wet ingredients to the milk/cider mixture (sugar, canola oil and extract). 5. In several batches, add the dry mixture to the wet mixture and mix very well. Using an ice cream scoop or a small ladle, scoop batter into prepared pan or silicon cups. 6. Bake for about 18 minutes, until cake springs back to touch. Cool completely on a cake rack before frosting.

    Eat cupcakes and wear skinny jeans! :) BUY MY BOOK! www.thestylediet.com DAILY VLOG CHANNEL http BLOG www.annasaccone.com TWITTER http FACEBOOK www.facebook.com ASK ME ANYTHING! www.formspring.me RECIPE: (Cupcakes) Ingredients: 1 tablespoon apple cider vinegar 1 and 1/2 cups almond milk 2 cups all-purpose flour 1 cup white sugar (I used caster sugar) 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup coconut oil, warmed until liquid (I used walnut oil) 1 and 1/4 teaspoons vanilla extract 1. Preheat the oven to 350 F or 175 C. Line 2 muffin tins with 18 cupcake cases. 2. In a smaller bowl, measure the apple cider and almond milk into it and leave it to curdle for about 5 minutes. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In the separate smaller bowl, whisk together the almond milk mixture, coconut oil and vanilla. Pour the wet ingredients into the dry ingredients and mix together until blended. Spoon evenly into the prepared cases. 3. Bake in the preheated oven for 15-20 minutes, or until the tops spring back when lightly pressed. Cool in the pan before setting on a wire rack. When cool, arrange the cupcakes on a serving platter and frost with desired frosting. (Frosting) Ingredients: 1 cup soya butter 3 and 1/2 cups powdered sugar 1 and 1/2 teaspoons vanilla extract 1/4 cup soy milk (in my opinion this is NOT needed! It will make it too runny!) Beat everything together until well-combined and fluffy.

            Ep.6 – Vegan Double Chocolate Muffins

            These are reminiscent of those jumbo chocolate muffins from Sams or Costco, except significantly less terrible for you. Vegan DOUBLE CHOCOLATE MUFFINS 1 1/2 cups flour (we did part all-purpose, part whole-wheat) scant 3/4 cup sugar 6 tablespoons unsweetened cocoa powder 2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons instant coffee powder 1 cup nondairy milk 1/2 cup canola oil (we did half oil, half applesauce to lower the fat) 4 tablespoons (1/4 cup) soy yogurt 1/2 cup chocolate chips In medium bowl, whisk dry ingredients together. Sift if the cocoa powder is clumpy, or just mash the clumps out with a spoon. In a smaller bowl or a large measuring cup, combine the wet ingredients. Add the wet to the dry, mixing gently, until almost combined. Fold in the chocolate chips. Pour into greased muffin tin; you can make large, mushroom-topped muffins by making 8 or 9 muffins and filling up the cups to the very top. Bake at 375 F for about 20 minutes. Let cool in pan for about 15 minutes, then finish cooling on wire rack. Makes 8 to 12 muffins.

                  I sent Destorm a Vegan Blueberry Orange Muffin in his Snail Mail. What’s in the box? It was like 2 weeks old by the time he got it, but he ate it, and he said it was good. If Destorm liked it, so should you, here is the recipe: Ingredients: 1/3 cup vegetable oil 3/4 almond milk 2 tablespoons orange juice 1/4 cup apple sauce 2 teaspoons orange zest 1 3/4 self rising flour 1 cup blueberries Directions: Preheat oven to 400 degree fahrenheit With a wire wisk, mix together vegetable oil, milk, orange juice, apple sauce, and orange zest. Gradually add in self rising flour with mixing spoon, being sure not to over mix. Fold in blueberries. Add you mixture to a muffin pan lined with paper cups or sprayed with a no stick spray.
