Best Healthy Bran Muffins and Whole Wheat Banana Muffins Recipes

Now that the holidays are past and we are about to enter a new year, it seems many of us are determined to diet or eat healthier in the coming year.  With the world-wide economic crisis we are in, many may think they will not be able to eat healthier because they are cutting back on their food budgets.  With the stress families are under, now is the time to improve your eating habits.  It is important to stay healthy during these rougher times.  You can start by making small changes.  Try these healthy muffin recipes for breakfast or a light lunch.  Pair them with some fresh fruit (buy seasonal fruits to save money) and you have a healthy meal.  And remember, huge muffins don’t fit into your healthier eating or diet plan.  By making your own muffins, you can make them in mini-muffin tins or only fill your regular muffin tins half full.  You will have a healthier portion size.

Whole-wheat banana muffins

5 medium-ripe bananas
2 cups whole-wheat flour
1/2 tsp salt
3 tsp baking powder
2 tbsp honey
1/4 cup milk
2 tbsp melted butter
1 egg

Peel bananas and mash with a fork.  Set aside. In a large bowl, mix together the flour, salt, and baking powder.  Set dry ingredients aside.  Add the remaining ingredients to the bananas and mix thoroughly.  Add banana mixture to the flour mixture.  Grease 12 muffins cups and divide mixture evenly into the muffin cups.  Bake at 400 degrees for about 20 minutes or until done.

Healthy bran muffins

1/4 cup unsweetened applesauce
1/4 cup egg substitute
1 1/2 cups low-fat buttermilk
3 tbsp canola or olive oil
2 tsp vanilla extract
1/8 tsp salt
1/4 cup instant low-fat dry milk
3/4 cup SPLENDA granular
1 cup wheat bran, divided
1 1/2 cups all-purpose flour
1 1/2 tsp baking soda
1 tsp ground cinnamon
2 tbsp flaxseeds
2 tbsp raisins

Preheat oven to 350 degrees.  Line muffin cups with paper baking liners. Blend applesauce, egg substitute, buttermilk, oil, vanilla, salt, dry milk, and SPLENDA together in a large mixing bowl, using a wire whisk.  Reserve 2 tablespoons wheat bran and set aside.  Add remaining wheat bran, flour, baking soda and cinnamon to mixture in large mixing bowl.  Stir well.  Mix in flaxseeds and raisins.  Fill muffin cups 1/2 to 2/3 full of batter.  Top each with a sprinkle of the reserved wheat bran.  Bake 20-25 minutes or until toothpick inserted in center comes out clean.

Very Vegan Bran Muffin

The blend of oat and wheat bran, wheat germ and raisins, make this fiber-rich muffin delicious and satisfying with a soft, moist texture and the mellow taste of molasses! Preparation time: 15 minutes Baking time: 18-20 minutes Makes 1 dozen muffins Ingredients: 1 1/2 cups whole wheat flour 3/4 cup brown sugar 1/2 cup safflower oil 1/4 cup wheat germ 1/4 cup oat bran 1/4 wheat bran 2 tsp baking powder 1 cup water 2 tbs molasses 1 tsp vanilla 1 1/2 tsp apple cider vinegar 1/2 cup raisins Preparation: Preheat oven to 350°. Mix flour, brown sugar, wheat germ, oat bran, wheat bran, baking powder, and raisins together in a large bowl. Mix water, molasses, and vanilla together. Add safflower oil, apple cider vinegar, and water mixture to the dry ingredients. Mix slowly until a thick batter forms. Pour batter slowly into paper-lined cupcake tray. Fill each holder just above half-way. Bake at 350° for 17 minutes, and insert a toothpick to test. Muffins are ready when a toothpick can be inserted and removed and it comes out clean. Cook’s Note: Fiber rich foods are essential for good health. They help in lowering blood cholesterol, controlling blood sugar levels and aid in weight loss. Bake up a batch of these muffins and try one. Try two, they are that good!

              How Much Would These Recipes Make?

              Ok, well I am going to make some horse treats to sell at my barn. I have found some pretty good recipes online but they didn’t say how much it would make. Put this into the cooking/recipes category but it failed..

              Bridle Delight
              Ingredients:
              -1 cup flour
              -1 cup oats
              -2 cups of water
              -½ cup finely chopped carrots
              -½ cup finely chopped apple
              -1 teaspoon sugar
              -1 teaspoon salt
              -2 teaspoons canola oil
              -4 peppermint candies
              -1/3 cup molasses
              Directions:
              -Mix together all ingredients in a large bowl
              -Roll into 1” balls and flatten
              -Put in oven at 325 for 20 mins

              Horse Carrot Crispies
              Ingredients:
              -¾ cup oatmeal
              -1/3 cup molasses
              -½ cup of water
              -¾ cup flour
              -¾ cup bran
              -½ cup of brown sugar
              -1 apple
              -2 carrots
              Directions:
              -Pre-heat oven to 400 degrees
              -Grease muffin tin
              -Shred apples and carrots
              -Mix apple and carrots with molasses
              -Add brown sugar, flour, water, bran, and oatmeal
              -Scoop dough into muffin tin and sprinkle with brown sugar
              -Bake for 30-45 mins

              So out of these recipes, do you know how much any of them would make? I would like to know because I need to know how much I need to buy. (horse owners out there, how much would you pay for these treats?)

                New Breakfast Foods That I Won'T Get Bored of So Quickly?

                NOTE: You don’t have to read all of this, each paragraph is a different food topic. Pick one to comment on, or several, or leave a totally creative comment about some great breakfast food that I forgot!

                I am so picky about breakfast! I find something I like and then eat it until I’m sick of it. I need breakfast foods that I can tweak and change so that I don’t end up hating them in a week. I don’t need to watch my weight. Calories and fat and whatnot are no object. I’m a runner and I like to have something filling and wholesome after a good run.

                I generally don’t like most cereals, because they are either waaay too sugary, or they are nasty health food, bran flax fiber breakfasts.

                I DON’T like peppers, onions, tomatoes, and that jazz. ESPECIALLY for breakfast. I also don’t like really sugary or over processed junk. Every brand of french toast sticks I’ve ever bought made me sick. The list of unpronounceable ingredients is hideous.

                I LOVE LOVE LOVE LOVE LOVE muffins, but the only recipe that I’ve ever really liked is my mother’s banana nut bread muffins, and I’m ALMOST tired of those too.

                I like hearty breakfasts, and I love the idea of making some sort of breakfast soup. A filling, warm, breakfast soup with eggs, maybe bacon… what else? I’ve also seen a "cold soup" recipe that was just a bunch of fruit in orange juice. That sounds fantastic, but not very filling. I’m usually hungry pretty soon after eating fruit.

                I LOVE fruit, so I def like to include that when I can. I also like oatmeal, but it get soooo boring. I try different brands, flavors, toppings, but in the end I’m still bored! Any suggestions in add-ins? I love pecans, walnuts, cinnamon, fruit, and even chocolate chips.

                I’d like to incorporate more meat (healthy meat) into my breakfast as well. Turkey bacon is awesome, and I <3 maple sausage (in moderation).

                I eat a lot of eggs, because we have two pet chickens. I make scrambled eggs, omelets, egg drop soup… I try different types of cheese, nuts and other toppings. Any topping suggestions?

                I used to eat bagels all the time, but they are SO boring. I tried different cream cheeses, cinnamon and sugar, and just plain butter. That goes for toast as well. The same toppings plus cheese toast and peanut butter toast are good. Any other suggestions?

                I love pancakes but I’m terrible at making them and they take forever and require so much clean up… and the frozen kind are usually palatable, but they generally leave me feeling yuck.

                I love oats, and what a great base they are for recipes. Any kind of easy oat type cookie that isn’t very sugary with nuts sounds like a great breakfast on the go type thing.

                All right, so what do you like for breakfast? Any suggestions that meet my oh-so-narrow criteria? Any thoughts, recipes, ideas? Anything foreign, novel, new, different, interesting, intriguing? Please don’t read this without posting SOMETHING that would be a good breakfast food.
